Ingredients

  • 3 to 4 large baking apples, such as honeycrisp, jonagold, or pink lady

Cinnamon And Brown Sugar Mixture

  • ¼ cup brown sugar
  • ½ cup lightly crushed nuts, I used ¼ walnuts and ¼ cup pistachios
  • ¼ cup raisins, cranberries, or other chopped dried fruit of your choice
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon cardamom
  • 1 to 2 tablespoon Extra virgin olive oil, a milder and fruity olive oil such as Italian Nocellara EVOO

Instructions

  1. Get the oven ready. At 375 degrees Fahrenheit, position the rack so that it is in the middle of the oven.
  2. Prepare the mixture consisting of cinnamon and brown sugar. Put the sugar, almonds, raisins, or dried fruit of your choosing into a small bowl and mix those ingredients together. The cinnamon and cardamom should be added. Combine thoroughly.

Stuffed Baked Apples

  1. Keep the apple cores. Take out the core using an apple corer or a sharp cutting knife, being careful to keep the bottom ½-inch of the apple whole. I like to use a cutting knife to cut around the core and take it out, leaving a hole about an inch wide. Then, take out the seeds with a small spoon to make room for the brown sugar inside.
  2. Put the apples inside. In a baking dish, place the apples with the cores facing up. Put the brown sugar and nut mix inside the apple holes to fill them all the way to the top.
  3. Put in the hot water and EVOO. Cover the stuffed apples with about 1 to 2 tablespoons of olive oil. Pour ¾ cup to 1 cup of hot water from the dish’s side.
  4. Bake! Put the baking dish in the oven and bake for 40 to 45 minutes, or until the apples are soft and fully cooked. Be careful not to bake them too long, because you don’t want them to be mushy.

Sliced Baked Apples

  1. Peel the apples and cut them up. Cut your apples into ½-inch slices after taking off the core and peel. Put the apple slices on a baking dish or pan.
  2. Spread the brown sugar and cinnamon mix on top. Then, drizzle with 2 tablespoons of olive oil and ¼ cup of hot water. Instead of water, you can also add some orange juice. Sprinkle to mix.
  3. Bake. Toss the apples around halfway through the baking time and put the dish in the oven. Bake for about 25 to 30 minutes.

To Serve

  1. Take the apples out of the oven and brush them with the brown sugar sauce that’s been sitting at the bottom of the pan. You can serve this treat as is or top it with your favorite vanilla ice cream or even labneh!
