Ingredients 

  • 2 (1 to 1 1/2-pound) pork tenderloins (also called pork fillet)
  • Salt and fresh ground black pepper
  • 2 tablespoons canola or vegetable oil
  • 1 to 2 tablespoons seasoning blend/rub of your choice, fresh or dried
  • 3/4 cup wine, broth, apple cider or a combination
  • 1 tablespoon unsalted butter

Step 1: Season the Pork

It’s best to pat the pork dry and then season it with a lot of salt and pepper. The salt and pepper will stick better if you pat the meat dry. It also means that the meat will cook more quickly in the pan with less bubbling.

Step 2: Brown the Pork in a Skillet

Every time we cook pork, we sear it on all sides first. When it’s ready, put it in a hot pan. Our cast iron skillet works great for this. Cook them on all sides until they turn golden brown. It’s okay if the middle of the pork is still raw.The pork is ready to go into the oven when it’s cooked on all sides.When we make pork chops, we use the same method!

Step 3: Finish in the Oven

We put the pork into a hot oven to finish cooking it. The oven is kept very hot, and the pork is cooked for 15 to 20 minutes.

When you stick an internal thermometer into the middle part of the pork, it should read between 145 and 150 degrees F. That means the pork will be juicy and have a little pink in the middle. Don’t like the pink? Cook it a little longer, but don’t let it get too done.

  • A spicy rub with pepper, garlic, maybe some chipotle + Apple Cider, Apple Juice or Cranberry Juice
  • Chicken Seasoning + Chicken Stock
  • Steak Seasoning + Red Wine or Beef Broth
