  • This recipe for morning pizza is live evidence that a refrigerator that is only half full may really be a gift in disguise.
  • In the same way that I developed the concept for my zucchini feta skewers, I came up with it while I was hungry and searching through my refrigerator.
  • My go-to dinners are usually these straightforward and quick meals, and this morning pizza is the most recent example of a circumstance in which I could eat it every day or every other day.
  • In order to make a superb morning pizza in only ten minutes, there are two secrets. The first is a pita that was purchased from a shop.
  • The thin bread crisps up so beautifully, much like a pizza with a thin crust, but with a fraction of the work.

Ingredients

  • 1 large whole wheat pita bread or 2 medium pitas (or your favorite flatbread)
  • Extra-virgin olive oil
  • ½ cup grated mozzarella, more to your liking
  • 1 teaspoon za’atar, more to your liking
  • Pinch red pepper flakes (optional)
  • 1 shallot, thinly sliced into rounds
  • 1 Roma tomato or a handful of cherry tomatoes, sliced
  • 2 hard boiled eggs, peeled and grated or chopped
  • Kosher salt

Instructions

  1. Getting the oven ready: Preheat the oven to 375 degrees Fahrenheit and place a rack in the middle of the oven.
  2. Place the pita (or flatbread) on a sheet pan and spray the top with olive oil. This will allow the pita to be brushed throughout.
  3. On top of the pita: The mozzarella, za’atar, and red pepper flakes, if you are using them, should be sprinkled on top. The shallots, tomatoes, and grated egg should be spread on top of the dish.
  4. Use a very tiny amount of kosher salt to season the dish.
    Place in the oven: Bake for about five minutes, or until the cheese has melted and the pita has become somewhat crunchy.
  5. Za’atar may be sprinkled on top as a last finishing touch, if desired, before serving. While it is still hot, cut it up and enjoy it!
