Ingredients

  • 3 cups (300g) all-purpose flour
  • 1/3 cup (67g) sugar
  • 3/4 teaspoon salt
  • 1 tablespoon (15g) baking powder
  • 1 teaspoon ground cinnamon (or apple pie spice)
  • 8 tablespoons (115g) unsalted butter, cubed
  • 1 medium apple, peeled and grated
  • 1/2 cup (125ml) heavy whipping cream
  • 1/4 cup (60ml) milk, plus extra for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract

Maple Cinnamon Glaze

  • 1 1/2 tablespoons unsalted butter
  • 3 tablespoons maple syrup
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • Pinch of cloves
  • 1/2 cup (50g) powdered sugar

How to make it

  • Warm the oven up to 400 degrees F and put parchment paper on a baking sheet. Put the cinnamon, sugar, salt, baking powder, and flour through a sieve into a big bowl. As you work in the chopped butter, make sure that there are still pieces of butter that you can see.
  • On top of the flour mixture, grate the apple and stir it in. Whip the cream, milk, egg, and vanilla together in a different bowl. Add just enough to the dry ingredients to make the dough come together.
  • Place the dough on a greased surface and fold it in half. Press down gently and fold it again until it is smooth. It’s really easy for me to do this job with a bench scraper. Do not work the dough too much, just enough to bring it together.
  • By folding the dough, you can make the scones’ fluffy layers taste even better. Make a disc out of the dough that is about 1½ inches thick. Cut it into 8 wedges and put them on the baking sheet that has been prepped.
  • Brush the scones with a little milk and bake for 18 to 22 minutes, or until the tops are just beginning to turn brown. Maple Glaze: Make the glaze while the scones cool down.
  • Add the maple syrup and stir in the butter until it melts. After that, add the salt, cinnamon, and cloves and mix them in until the mixture is smooth. Cloves aren’t necessary, but I love how they make the food taste better.
  • Mix the powdered sugar in until it’s all mixed in. If you need to, add more powdered sugar to get the consistency and texture you want. Pour glaze over scones that have already cooled down, or dip the tops of the scones in the glaze.
