Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 36 mini peanut butter cups, unwrapped
Instructions:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and creamy peanut butter until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough.
- Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, leaving some space between each cookie.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The cookies may look slightly undercooked in the center, but they will continue to set as they cool.
- While the cookies are baking, unwrap the mini peanut butter cups.
- As soon as the cookies come out of the oven, press a mini peanut butter cup into the center of each cookie. The heat from the cookies will melt the chocolate, and it will set as the cookies cool.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Repeat the process until all the dough is used, and enjoy your delicious Peanut Butter Cup Cookies!
These cookies are sure to be a hit with peanut butter lovers.
