PEANUT BUTTER CUP COOKIES Recipe

Table of Contents

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 36 mini peanut butter cups, unwrapped

Instructions:

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and creamy peanut butter until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough.
  6. Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, leaving some space between each cookie.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The cookies may look slightly undercooked in the center, but they will continue to set as they cool.
  8. While the cookies are baking, unwrap the mini peanut butter cups.
  9. As soon as the cookies come out of the oven, press a mini peanut butter cup into the center of each cookie. The heat from the cookies will melt the chocolate, and it will set as the cookies cool.
  10. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  11. Repeat the process until all the dough is used, and enjoy your delicious Peanut Butter Cup Cookies!

These cookies are sure to be a hit with peanut butter lovers.
