Apple pies on their own are one of my favorite fall treats. It takes a little while to get the golden brown lattice top, but anyone who knows how to bake can do it! Do not let it scare you. - 2 pie crusts (homemade or store-bought)
- 2 cups chopped apples peeled and cored (about 2 large apples) (300g)
- ⅓ cup granulated sugar (66g)
- 2½ tablespoons all-purpose flour
- 1½ teaspoons ground cinnamon
- ½ teaspoon vanilla extract
- 3 tablespoons unsalted butter cut into 24 pieces
- 1 large egg
- 1 tablespoon water
How To Make Mini Apple Pies
- Add the apples and sugar to a big bowl and mix them together. Leave at room temperature for about an hour, or until the liquid comes out. Set it away after draining.
- The first pie crust should be rolled out to about ⅽ of an inch thick. Then, use a 3 ½-inch cookie cutter to make 12 rounds. In a 12-cup muffin pan, press each round of dough into a well.
- Put the dried apples in a bowl and add the flour, cinnamon, and vanilla. Put two tablespoons of the apple filling into each cup lined with dough.
- Place two pieces of butter on top of the apple mixture and gently press them into the apple mixture to make a smooth layer.
- Make the second pie crust into a 13-inch square by rolling it out. Make a big grid out of the dough by cutting it into strips that are ½ inch wide.
- With a 2½-inch round cookie cutter, cut the lattice into 12 rings. (If necessary, reroll and cut scraps again.) Stack a lattice circle on top of each filling and press the sides of the circle to the bottom crust.
- Whisk the egg and water together in a small bowl until they are well mixed. Use egg wash to brush the ends of the lattice.
- Place in the oven and bake for twenty to twenty-five minutes, or until the filling bubbles and the tops turn golden brown. For 10 minutes, let it cool down a bit in the pan.
- With care, take the pies out of the pan and set them on a wire rack to cool totally.
