I mean, I don’t know anyone who can say no to a square of Millionaire’s shortbread. It’s a pretty amazing mix of chocolate, caramel, and shortbread that lives up to its name. Shortbread Crust

  •  2 cups all-purpose flour (240g)
  •  1 cup unsalted butter room temperature (226g)
  •  1/2 cup granulated sugar packed (100g)
  •  1 egg yolk
  •  1 teaspoon vanilla extract
  •  1/2 teaspoon salt

  •  1 14- oz can sweetened condensed milk
  •  1/2 cup unsalted butter cut into Tablespoon-sized pieces (113g)
  •  1 cup light brown sugar packed (200g)
  •  1/4 cup Golden or corn syrup light or dark (60ml)
  •  1 teaspoon vanilla extract
  •  1/2 teaspoon salt
Chocolate Ganache

  •  1 1/2 cups semisweet chocolate chips
  •  1/3 cup heavy cream (80ml)
  •  1 pinch sea salt to sprinkle on top

 How to make it

  • Warm the oven up to 350F and put foil or parchment paper in a 9×9-inch baking dish. Add the sugar and salt to the butter and beat it until it’s light and fluffy.
  • Mix in the egg whites and vanilla until everything is well mixed. A little at a time, add the flour and mix until it’s just mixed.
  • Place the dough in the pan that has been made and press it down so that it is a flat surface. Bake at 350F for 22 minutes, or until the edges are golden.
  • Make the caramel while the base bakes. That being said, you don’t need a candy thermometer to do this. Put the butter, brown sugar, salt, vanilla, sweetened condensed milk, and either corn syrup or golden syrup together.
  • Place over medium-low heat and mix with a whisk until smooth. Keep mixing over the heat as the caramel bubbles and gets darker. When it gets to 225F, it will start to thicken and pull away from the sides. After 5 to 6 minutes, your caramel is done.
  • Place the mixture on top of the shortbread base and smooth it out to make a flat layer. Put it in the fridge for 10 minutes to set the caramel.
  • Cut up the chocolate and melt it with the cream. You can do this in a double pot or by microwaving it in two to three 20-second bursts and stirring each time.
  • Put the chocolate on top of the caramel and spread it out so that it’s all the same thickness. If you want, you can sprinkle it with salt. Then chill it and cut it into pieces.
