  • 1 cup stone ground grits
  • 3 cups chicken broth
  • 1 cup whole milk
  • 4 ounces feta, crumbled, plus more to garnish
  • 1 red onion, diced
  • 1 cup tomato, diced
  • 3 cloves garlic, minced
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon Greek seasoning
  • ¼ cup Kalamata olives, chopped
  • Salt and pepper to taste
  • Optional Ingredients
  • fresh parsley, to garnish


  1. Bring the chicken broth to a boil, and then add the grits. Reduce the heat to low, cover, and stir regularly for 15 to 20 minutes.
  2. Add the milk and feta, and allow it to cook for 10 more minutes, or until the grits are tender.
  3. Sautée the onion until it begins to soften, then add the tomatoes. Once the tomatoes have cooked down, add the garlic, and cook until fragrant.
  4. Add the shrimp, and cook until pink and opaque, about 3 to 4 minutes. Add the Greek seasoning, olives, and salt and pepper to taste.
  5. Spoon the grits into a bowl, and top with the shrimp mixture. Garnish with more feta, and parsley if desired.
