Ingredients

For The Dough

  •  3-¼ to 3-¾ cups (403g-465g) all-purpose flour
  •  ¼ cup (50g) granulated sugar
  •  1 packet Fleischmann’s® RapidRise® Yeast – Instant Yeast (2 ¼ teaspoons)
  •  1 teaspoon salt
  •  ¾ cup (177ml) milk whole, 2%, 1% or nonfat
  •  ¼ cup (59ml) water
  •  ¼ cup (57g) unsalted butter sliced into tablespoons
  •  1 large egg

For The Coating:

  •  ½ cup (113g) unsalted butter , melted
  •  1 cup (200g) granulated sugar
  •  1 tablespoon ground cinnamon
For The Topping

  •  ½ cup (100g) packed brown sugar
  •  ¼ cup (57g) unalted butter
  •  1 teaspoon ground cinnamon

How to make it

  • Best to use a dough hook-equipped stand mixer. It takes longer to do this by hand or with an electric mixer. Whisk 2 cups flour, sugar, dry yeast, and salt in a large mixing basin.
  • In a microwave-safe bowl or cup, mix milk, water, and butter. Microwave on HIGH for 15 seconds at a time until very warm but not hot, about a minute (120° to 130°F; butter won’t melt). Egg into flour mixture.
  • Scrape bowl occasionally during 2 minutes of medium-speed beating. After adding 1 cup flour, beat 2 minutes on high, scraping bowl occasionally. Mix in enough leftover flour to form a ball.
  • Knead dough for 6–8 minutes on lightly floured surface until smooth and elastic and springs back when softly pressed with 2 fingers. Cover with a towel and rest 10 minutes.
  • Melt butter in a small bowl for the coating. In another small bowl, mix cinnamon and granulated sugar.
  • Cut dough into 36 pieces (half, third, third again, then halves). Roll each piece in cinnamon sugar after dipping in melted butter.
  • Use cooking spray on pan. Put dough in pan. Cover with cloth and let rise in warm place for 45 minutes till doubled.
  • To make the topping, melt the remaining ¼ butter in a small bowl with the rest of the melted butter. Add remaining cinnamon sugar mixture, brown sugar, and cinnamon to melted butter. Mix well. Cover the monkey bread in the pan with this mixture.
  • Wait an hour for it to double in size. It helps to warm it on the stove while the oven heats.
    Preheat oven to 375°F.
  • In a 9×13-inch baking dish, stack dough pieces in a single layer Bake for 20 minutes until golden and cooked through after rising.
  • Fluted tube pan or Bundt pan: bake 40–50 minutes until golden and done. For two 9×5-inch bread pans, bake for 20 minutes until golden and cooked through.
  • Grease 12 monkey bread muffin cups and place 3 slices each. Bake for 20 minutes until golden and done.
