Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, ground ginger, cinnamon, cloves, and nutmeg.

Set aside.

Cream the Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add Eggs and Molasses: Beat in the eggs one at a time, then add the molasses and mix until well combined.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the hot water.

Begin and end with the dry ingredients, mixing just until combined after each addition.

Pour Batter into Pans: Divide the batter evenly between the prepared cake pans and smooth the tops.

Bake: Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Prepare Cream Cheese Frosting: In a separate bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.

Assemble the Cake: Once the cakes are completely cool, spread a layer of cream cheese frosting on top of one cake layer.

Place the second cake layer on top and frost the entire cake with the remaining cream cheese frosting.

Optional Garnish: Garnish with chopped nuts or crystallized ginger if desired.
