How to make it

  • In a medium-sized pot, mix sugar, flour, and salt together. Use a whisk to get rid of any lumps in the flour. Granulated sugar (200 g), all-purpose flour (40 g), and salt (¼ teaspoon).
  • Set the pan to medium heat and whisk in the milk until the mixture is smooth. 1 glass (236 ml) milk¹ Keep mixing the mixture until it gets thick enough to resemble pudding and the whisk leaves a mark.
  • Take it off the heat and pour it into a heat-safe container. Press a piece of plastic wrap, wax paper, or parchment paper directly against the top of the oil to keep a skin from forming.
  • Let cool to room temperature. You could also make this mixture ahead of time, put it in the fridge for a day or two, and then bring it to room temperature before continuing.
  • After the flour mixture has cooled, beat the butter on high speed with an electric mixer or stand mixer until it is light and fluffy. This may take a few minutes, and you may need to use a spatula to clean the bowl.
  • 1 cup (226 g) butter that isn’t salted Lower the mixer’s speed to medium and add the flour mixture slowly, one large spoonful at a time.
  • Make sure that each spoonful is fully mixed in before adding the next, and keep beating until all the ingredients are well mixed. With a spoon, scrape the bowl’s sides and bottom. Then, add the vanilla extract and mix it in.
  • Slowly raise the speed to medium-high and whip the frosting until it is fluffy, light, and smooth (it shouldn’t look greasy). If you are having trouble or your frosting is splitting, please read the part in the blog post that talks about how to fix the problem.
  • 1 teaspoon of vanilla powder Get rid of any air bubbles in the frosting with your spoon, then use it as you like.
