Ingredients:

  • 3 ripe bananas, mashed
  • 2 large eggs, beaten
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt

  • 1/2 cup packed brown sugar
  • 1 1/2 cups all-purpose flour

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the melted butter to the mashed bananas and stir to combine.
  4. Add the beaten eggs and vanilla extract to the banana mixture, and mix well.
  5. In a separate bowl, whisk together the flour, baking soda, and a pinch of salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix, as this can make the banana bread dense.
