- 3 ripe bananas, mashed
- 2 large eggs, beaten
- 1/2 cup (1 stick) unsalted butter, melted
- 1 teaspoon vanilla extract

- 1/2 cup packed brown sugar

Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth.
- Add the melted butter to the mashed bananas and stir to combine.
- Add the beaten eggs and vanilla extract to the banana mixture, and mix well.
- In a separate bowl, whisk together the flour, baking soda, and a pinch of salt.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix, as this can make the banana bread dense.
- Fold in the granulated sugar and brown sugar until evenly distributed in the batter.
- If you’re adding nuts, gently fold them into the batter.
- Pour the batter into the greased loaf pan, spreading it evenly.
- Bake in the preheated oven for about 60-70 minutes or until a toothpick inserted into the center comes out clean. The baking time may vary, so start checking for doneness around 50 minutes.
- Once done, remove the banana bread from the oven and let it cool in the pan for 10-15 minutes. Then, transfer it to a wire rack to cool completely before slicing.
