  • 3 ripe bananas, mashed
  • 2 large eggs, beaten
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt

  • 1/2 cup packed brown sugar
  • 1 1/2 cups all-purpose flour

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or cooking spray.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the melted butter to the mashed bananas and stir to combine.
  4. Add the beaten eggs and vanilla extract to the banana mixture, and mix well.
  5. In a separate bowl, whisk together the flour, baking soda, and a pinch of salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix, as this can make the banana bread dense.
  7. Fold in the granulated sugar and brown sugar until evenly distributed in the batter.
  8. If you’re adding nuts, gently fold them into the batter.
  9. Pour the batter into the greased loaf pan, spreading it evenly.
  10. Bake in the preheated oven for about 60-70 minutes or until a toothpick inserted into the center comes out clean. The baking time may vary, so start checking for doneness around 50 minutes.
  11. Once done, remove the banana bread from the oven and let it cool in the pan for 10-15 minutes. Then, transfer it to a wire rack to cool completely before slicing.
