Ingredients:

- 2 tablespoons milk

Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and ground cinnamon.
- In a separate bowl, beat the eggs and then add the milk and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; it’s okay if there are a few lumps.
- Gently fold in the chopped apples until evenly distributed in the batter.
- In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).
- Drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pan. Fry the fritters until golden brown on both sides, about 2-3 minutes per side.
- Use a slotted spoon to transfer the fritters to a plate lined with paper towels to drain excess oil.
- In a small bowl, whisk together the powdered sugar, milk, and vanilla extract to make the glaze.
- While the fritters are still warm, drizzle the glaze over the top, ensuring each fritter is coated.
